(Leftover) Turkey Curry

This recipe can be adapted to your tastes, and what you have on hand…make it your own!

Ingredients

  • 500 g leftover cooked turkey- cubed or shredded
  • 1 medium onion sliced thin
  • 2 peppers – red & green sliced
  • 2-3 cloves of garlic crushed
  • 3 tsp garam masala 
  • 2 tsp turmeric
  • 1-2 tsp chili flakes
  • 1 can chopped tomatoes
  • 1 small can coconut milk
  • a few slivers of fresh ginger, if available
  • fresh coriander 
  • 1 tbs olive or rapeseed oil

Preparation

  1. Saute onions & peppers in pan w/ oil until  soft
  2. Add garlic and all spices, along with a dash of water to keep from sticking to pan
  3. Add turkey, tomatoes and coconut milk and bring to gentle boil, then turn to low heat and simmer to 10 minutes. 
  4. Serve hot with rice, naan or leftover stuffing! Add fresh coriander for extra zing.
