Eat
(Leftover) Turkey Curry
This recipe can be adapted to your tastes, and what you have on hand…make it your own!
Ingredients
- 500 g leftover cooked turkey- cubed or shredded
- 1 medium onion sliced thin
- 2 peppers – red & green sliced
- 2-3 cloves of garlic crushed
- 3 tsp garam masala
- 2 tsp turmeric
- 1-2 tsp chili flakes
- 1 can chopped tomatoes
- 1 small can coconut milk
- a few slivers of fresh ginger, if available
- fresh coriander
- 1 tbs olive or rapeseed oil
Preparation
- Saute onions & peppers in pan w/ oil until soft
- Add garlic and all spices, along with a dash of water to keep from sticking to pan
- Add turkey, tomatoes and coconut milk and bring to gentle boil, then turn to low heat and simmer to 10 minutes.
- Serve hot with rice, naan or leftover stuffing! Add fresh coriander for extra zing.
